It is Super rare that Wakui do Honyaki knives in fact you will not find any in other shops, he makes only couple a year for me
So I can sharpen them on 2 big horizontal wheels, that takes a lot of time as Honyaki blades is extra hard and have no cladding
This one is made out of blue 2 steel and exseptionaly hard !
Choil and spine is very nicely rounded
Kanji is on the Tang only on Gyuto
