A kiridashi is a simple single bevel knife that Japanese carpenters have used for hundreds of years. It is also one of the best things to learn sharpening on, because the bevel is flat and you see straight away what you are doing.

Most of these are carbon steel and will rust if you leave them wet. Wipe them dry and they last a lifetime.
